creamed corn from scratch

For supper last night we had beer-battered fish fillets, and since I want to use up what's in the freezer I dug out a bag of corn from the garden...

Googled 'cream corn recipe' and after reading several I combined the best of each and came up with this:

1 stick margarine
1 large onion, chopped
1/2 gallon cut corn
teaspoon sugar
coarse ground pepper, salt to taste
tablespoon flour
water
1 cup half&half

In a large pot, melt margarine. Add onion, heat till transparent. Stir in corn & sugar. Over medium heat simmer 15 minutes, till tender. Add salt & pepper to taste. In a small glass, stir together flour with just enough water to dissolve in. Add half & half. Add this mixture to the corn, stirring and simmering till thickened.

Dat's all.
